Candied Sweet Potato Casserole
This traditional crowd-pleaser is an easy-to-prepare side dish.
Serves 12
Ingredients:
6 large sweet potatoes
1 tbsp. vanilla extract
8 tablespoons (1 stick) unsalted butter, melted
1/2 cup light brown sugar
1 tsp ground nutmeg
1 tbsp ground cinnamon
1 tbsp kosher salt
1 tsp freshly ground black pepper
1 16 oz. package of marshmallows
1 16 oz. can of pineapple rings
Preparation:
1) Preheat the oven to 400 degrees.
2) Scrub the potatoes, prick them several times with a knife or fork, and bake them for 45 minutes to 1 hour, until soft when pierced with a knife.
3) Remove from the oven and scoop out the insides as soon as they are cool.
4) Place the sweet potato meat into a bowl and smash the sweet potatoes to a textured state.
5) Preheat oven to 350 degrees
5) Add the vanilla, butter, brown sugar, nutmeg, cinnamon, salt, and pepper. Mix together until combined and transfer to a buttered baking dish.
6) Place the pineapple rings on top of the mixture & top generously with the marshmallows.
7) Bake the potatoes for 20 to 30 minutes, until heated through & the marshmallows are golden brown.
