Haricot Verts with Caramelized Shallots & Sundried Tomatoes
Here’s a savory way to prepare these light, crisp and tender veggies.
Serves 12
Ingredients:
- 4 lbs Haricot Verts (French Green Beans)
- 4 tbsp butter
- 6 shallots, sliced 1/4" thick
- 1 cup sun dried tomatoes, sliced
- 2 tbsp grated lemon zest
- Salt & pepper to taste
Preparation:
1) Boil the beans in a large pot of salted water for 2 minutes. Put ice water in a big bowl.
2) Drain the beans & put immediately into the ice water bath to stop cooking. Drain the beans & refrigerate.
3) In a large skillet, melt the butter over medium high heat & add the shallots. Cook until the shallots start to brown.
4) Add the tomatoes & cook for 2 minutes.
5) Add the beans, lemon zest, salt & pepper. Cook for another 5 minutes
