Grilled Quesadillas
Ingredients
6 Flour Tortillas
Olive oil
1 lb. shredded Monterey Jack cheese
1 lb. shredded Cheddar cheese
5 scallions, minced
4-6 slices of pickled jalapeño peppers, finely minced
3 tablespoons fresh cilantro leaves, finely chopped
1 tablespoon ground cumin
1 teaspoon chili powder
1/3 teaspoon cayenne pepper (optional)
Juice of 1 lime
Preparation
Mix all of the ingredients together, except for the tortillas & oil. Heat up the grill to 350-400 degrees. Brush a little oil on 1 side of the tortillas & grill 2 tortillas until they get grill marks - make sure they don’t get too burnt. Then, brush a little oil on the other side & flip. Put the cheese mixture on top of 1 tortilla & spread it around. Place the other tortilla, grilled side down on the cheese. Continue grilling the quesadilla until the bottom tortilla begins getting grill marks & then flip the entire tortilla to grill the other side. Once the tortillas are grilled & the cheese is melted, place quesadilla on a surface to cool. Using a pizza cutter, cut the quesadilla across to create individual "slices".
