Salmon & Roasted Asparagus
with Lemon-Caper Sauce
Serves 4
Ingredients:
3 tbsp fresh lemon juice
3 tbsp red onion, minced
3 tbsp extra virgin olive oil
2 tbsp capers, drained & chopped
1 tbsp fresh thyme
1 tsp grated lemon peel
Salt & pepper to taste
4 pcs. fresh salmon (6 oz. ea)
1 lb. asparagus, trimmed
Preparation:
* Preheat oven to 450 degrees
* Whisk first 6 ingredients in a small bowl. Add salt & pepper to taste.
* Arrange asparagus on an even layer on an oiled baking sheet. . Drizzle a little oil on top. Sprinkle with salt & pepper to taste.
* Place pieces of salmon directly on top of the asparagus. Sprinkle a little salt & pepper on top of the salmon.
* Roast for about 20 minutes, until the center is opaque.
* Transfer the asparagus & salmon a platter. Spoon sauce over salmon & serve.
