Bob's Best Recipes
Fresh Tomato & Corn Salad

Serves 4

Ingredients:
8 ears fresh corn
1 tbsp salt
5 tomatoes, cored & diced
2 yellow peppers, diced
2 red onions, minced
2 jalapeno chile peppers, (optional) deveined, seeded, & minced
(please wash hands thoroughly after handling hot peppers)
2 cloves garlic, minced
¼ cup fresh lime juice
1 tbsp salt
½ cup extra virgin olive oil
¼ cup fresh oregano, chopped

Preparation:
* Bring a large pot of water to a boil & add salt. Add the corn & cook for 3 minutes.
* When cool, cut the corn from the cobs.
* Place the jalapeno peppers, garlic, lime juice, salt & pepper in a small bowl & whisk to combine. Add olive oil slowly while whisking to create a thick emulsion.
* Combine the cut corn, tomatoes, yellow peppers, & red onion in a large bowl.
* Pour dressing over the vegetables & stir to combine.

* Add oregano right before serving.
